200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, to serve 10)

Making the Citrus Syrup: Put all the components in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Then, turn off the heat allowing it to cool entirely. Transfer to a sterilised bottle, close it and store in the fridge, where it will keep for about a month.

Preparing the Cocktail Base: Mix every liquid ingredients into a large bottle, leave to sit for 60 minutes, then filter it preferably using cheesecloth, to ensure it's completely strained.

For serving: Pour 85ml from the batch mix to a cocktail shaker filled with ice, gently stirring carefully for one minute to chill. Pour to a frosted cocktail glass or a similar vessel, top with the cranberries and complete it with a brief mist of the essential oil over the top.
